Ingredients

  • 1 lb lean ground beef
  • 1 small onion, chopped (about 1/2 cup)
  • 2 cups water
  • 2 cups quick cooking white rice
  • 2 (15oz) cans Butter KernelĀ® Corn and Peppers Harvest Reserve (drained)
  • 1 (10.5oz) can condensed cream of mushroom soup
  • 1 (1 to 1.25oz) packet taco seasoning
  • 1 cup shredded Cheddar cheese (4oz)

Ingredients

Directions

In 12-inch skillet, cook ground beef and onions over medium-high heat 6 to 8 minutes or until beef is no longer pink, stirring frequently to break up meat. Drain if necessary. Stir in water and rice; bring to a boil. Cover; reduce heat. Simmer 5 minutes or until liquid is absorbed. Stir in all remaining ingredients except cheese. Cook 5 minutes or until thoroughly heated, stirring occasionally. Sprinkle with cheese.

Tip: This recipe is also great with 1-1.5 cups of salsa mixed in just before adding the cheese.

Serving Suggestion: For the cheese lovers in your family, top individual servings with additional cheese.
