Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped (1 cup)
  • 1 large garlic clove, finely chopped
  • 1 pound boneless skinless chicken breast halves, cubed
  • 2 teaspoons ground cumin
  • 1 (15.25oz) can Butter Kernel® Whole Kernel Corn (drained)
  • 1 (15oz) can black beans (drained, rinsed)
  • 1 (14.5oz) can diced tomatoes with jalapeños (do not drain)
  • 1/2 cup quick cooking white rice
  • 1/3 cup water
  • 2 cups (8oz) shredded Monterey Jack or Cheddar cheese (divided)
  • 3 (8-inch) soft flour tortillas, cut in wedges
  • Fresh cilantro, if desired

Ingredients

  • 1 (14.5oz) can diced tomatoes with jalapeños (do not drain)
  • 1/2 cup quick cooking white rice
  • 1/3 cup water
  • 2 cups (8oz) shredded Monterey Jack or Cheddar cheese (divided)

Directions

Heat oven to 350°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray.

In 12-inch nonstick skillet, heat oil over medium-high heat. Add onion, garlic, chicken and cumin. Cook 5 minutes, stirring occasionally, until chicken is no longer pink. Stir in all remaining ingredients except cheese, tortillas and cilantro. Cover; cook 5 minutes. Stir in 1 & 1/2 cups of the cheese.

Spoon half of the chicken mixture in baking dish. Layer tortilla wedges over chicken. Top with remaining chicken mixture; sprinkle with remaining 1/2 cup cheese. Bake 15 minutes or until thoroughly heated and bubbly around edges. Sprinkle with cilantro.

Tips: If you have prepared rice handy, omit the quick cooking rice and water; just stir in the cooked rice.

Also try substituting 4 corn tortillas for the flour tortillas.
