  • 1 (15oz) can black beans (drained, rinsed)
  • 1 (15.25oz) can Butter Kernel® Whole Kernel Corn (drained, rinsed)
  • 4 green onions, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • 2 tablespoons reduced sodium taco seasoning mix (from 1oz package)
  • 1 (28oz) can diced fire roasted tomatoes (do not drain)
  • 1 cup salsa
  • 9 oven ready lasagna noodles (from 8oz package; about 7x3 1/2-inches each)
  • 3 cups (12oz) shredded Monterey Jack cheeese

  • 1 cup salsa
  • 9 oven ready lasagna noodles (from 8oz package; about 7x3 1/2-inches each)
  • 3 cups (12oz) shredded Monterey Jack cheeese

Directions

Heat oven to 400°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray. Spray large sheet of foil with cooking spray.

In large bowl, mix beans, corn, onions, cilantro and taco seasoning. In another large bowl, mix tomatoes and salsa. Spoon 1/4 of the tomato mixture (about 1 cup) in bottom of dish. Place 3 of the lasagna noodles over the tomatoes. (They won’t cover the entire bottom.) Spoon half (about 1 & 1/2 cups) of the bean mixture over the noodles. Top with 1 cup tomatoes and 1 cup cheese. Repeat layering with 3 more lasagna noodles, remaining bean mixture, 1 cup tomatoes and 1 cup cheese. Top with remaining 3 lasagna noodles, remaining 1 cup tomatoes and remaining 1 cup cheese. Cover tightly with foil, sprayed side down.

Bake 35 minutes. Uncover; bake 10 minutes longer or until knife inserted in center easily pierces lasagna noodles. Let stand 5 minutes.

Serving Suggestion: Serve this lasagna with a big green salad and bread sticks for a complete meal.

Tip: Oven ready lasagna noodles need no pre-cooking. Brands may vary slightly in size. Use about 6 ounces of noodles, or enough to fit in baking dish with room to expand.
