Ingredients

  • 1/2 lb ground pork sausage
  • 1 (15.25oz) can Butter Kernel® Gold and White Corn Harvest Reserve drained, divided
  • 1/3 cup milk, divided
  • 1 egg
  • 1/3 cup whipping cream
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 green onions, sliced
  • 1/2 teaspoon ground white pepper
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon hot pepper sauce
  • 1/2 cup olive oil, divided
  • Toppings
  • 1 (8oz) package cream cheese, softened
  • 2 tablespoons butter, softened
  • 2 tablespoons whipping cream
  • 1 (4oz) can diced green chilies, drained
  • 2 tablespoons diced celery
  • 1 green onion, sliced
  • 2 tablespoons chopped fresh cilantro, divided
  • 6 soft taco flour tortillas (6 to 7 inch), cut in quarters
  • 1 tablespoon chipotle lime rub, if desired
  • 1/2 cup hot pepper jelly

  • 2 tablespoons butter, softened
  • 2 tablespoons whipping cream

Directions

In small skillet, cook sausage over medium-high heat 5 to 7 minutes or until no longer pink, stirring frequently to break up meat. Meanwhile, reserve 6 tablespoons of the corn for toppings. In food processor, add remaining corn and 2 tablespoons of the milk. Cover; process 5 seconds or until creamy. In large bowl, add remaining milk, egg and whipping cream. Beat with wire whisk until mixed. Stir in flour and baking powder until moistened. Stir in creamed corn mixture, sausage and all remaining fritter ingredients except the olive oil. Mix well. Set aside.

In same food processor, combine cream cheese, butter, 2 tablespoons whipping cream, green chilies, celery, 1 green onion and 1 tablespoon cilantro. Cover; process 10 seconds or until well mixed. Spoon into small bowl; stir in 4 tablespoons of the reserved corn. Set aside.

In 12-inch nonstick skillet, heat 1/4 cup of the oil over medium-high heat. Using a small scoop (about 1oz), add batter, flattening mixture slightly. Cook 2 minutes on each side or until golden brown and thoroughly cooked. Drain on paper towels. Repeat with remaining batter, adding more oil as necessary. Cover to keep warm.

Wipe out 12-inch skillet used for fritters. Add enough olive oil to coat bottom of pan. Fry tortilla quarters until crisp, turning to brown both sides. Remove to paper towels. Repeat until all tortillas are fried.

To assemble appetizers, sprinkle each tortilla quarter with rub if desired and spread with 1 tablespoon cream cheese spread. Top with a fritter, 1 teaspoon hot pepper jelly and a sprinkle of the remaining 2 tablespoons corn and 1 tablespoon cilantro.

Tip: To keep appetizers warm until served, heat oven to 250°F. Place fried fritters on cookie sheet and place in oven. Arrange fried tortillas on metal cooling rack and place in warm oven to keep warm and crisp.
