Corn and Cherry Tomato Pizza
Ingredients
- 4 (8 inch) flour tortillas
- 1/2 cup marinara sauce
- 1 cup shredded cheese
- 1 (15.25oz) can Butter KernelĀ® Whole Kernel Corn (drained)
- 24 cherry tomatoes, halved
- 1 tablespoon vegetable oil
- Chopped fresh basil for garnish

- 1/2 cup marinara sauce
- 1 cup shredded cheese

- 1 tablespoon vegetable oil

Directions
Preheat oven to broiler setting. Heat 1/4 tablespoon of the vegetable oil in a cast iron skillet over medium heat. Wipe skillet with a paper towel when glistening, and add 1 flour tortilla. Top with 1/4 each of the marinara sauce, cheese, corn, and tomatoes. Transfer the skillet to the oven, and cook under broiler for 3-5 minutes, until the cheese is bubbly and the edges of the tortilla begin to char. Remove pizza, and repeat with remaining ingredients, adding additional oil between each if necessary. Garnish with fresh basil.
