1 cup corn meal
1 cup all-purpose flour
3 tablespoon sugar
2 teaspoons baking powder
1 cup buttermilk
2 eggs
2 tablespoons vegetable oil
1 (15oz) can Butter Kernel® Corn & Diced Peppers, drained
1 cup shredded Cheddar cheese (4oz)
2 tablespoons chopped green onions


Heat oven to 400˚F. Grease 9-inch square pan, or spray with cooking spray. In large bowl, mix corn meal, flour, sugar and baking powder. Add buttermilk, eggs and vegetable oil. Mix just until ingredients are moistened. Fold in corn and peppers, cheese and onions. Spread in pan. Bake 25 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes before cutting.
